Wow it seems crazy that this is the last day of January. It seems like this month flew by…or is it just me? I’m wrapping up things here in Minneapolis and prepping for the move while avoiding the Super Bowl crowds and road closures. I hit the road next week and hoping that the snow stays away. As per usual in the last few days before moving I am eating out of the freezer and cupboards. Time for a brief look at this week’s WIAW
I had some vanilla almond milk in my coffee this morning and it was really good. Trying to use up the last bit of the Birch Benders pancake mix before leaving. Added 2 eggs on the side with some ketchup
I went out to buy some road trip snacks to be better prepared. When I drove here from Pittsburgh I assumed that getting off the I 90 toll road from Chicago to Cleveland would be no big deal. Unfortunately it seemed that you could only exit the toll road in very few spots and many place and most were just gas station rest stops with a few restaurants. I like to literally stop for gas and a quick bite only when driving so didn’t want to go searching for places to eat. I picked up a big box of Simple Mills crackers at Costco, some dried apples, and a bag granola bar bites. Hopefully I’ll be stocked up better with snacks this time!
For lunch I opened the crackers and had some with a big mug of chicken bone broth. It was cold out and I am all about the broth lately. I’ve even been sipping on it while cooking dinner. Added the remainder of some red pepper hummus in the fridge to the mustard with my turkey crackers.
For dinner I diced up some sweet potato and roasted it with some salmon. I added some guac on top. It was good but I think I am kinda feeling done with seafood for a bit. While I was having stomach issues rice and salmon were literally some of the foods I could tolerate and I think I need a break from them. I’m looking forward to stocking up on some poultry and red meat when I get to Boston. I’ve been bookmarking a lot of recipes to try on Pinterest. I forgot how handy it is to compile links and articles there instead of creating a ton of bookmarks on the computer.
Had some Hu Kitchen Chocolate for a snack with a diced warmed cinnamon apple and some raspberries.
