Hi Friends and happy WIAW! Thanks for stopping by for the weekly chat. After a very brief week of milder temps it was bitterly cold and snowing all weekend. I stayed closed to home as much as possible. I did watch a little of the football games. People seemed pretty excited here on Monday at the win on Sunday. I don’t cheer for the Vikings but do think it would be kind of neat for the first time ever for the hosting team to get in the game. I drive by the stadium on my way home from work each day. They have started constructing all the outdoor structures. You would never know the Super Bowl is coming to the city otherwise. I remember living in Phoenix 3 years ago when it was there. There was a lot more excitement and build-up in the city. Different atmosphere here for sure.
Still working my way through my Birch Benders pancakes. Excuse the old photo from last week. I have been increasing my coffee to almond milk ratio in my morning drink and my stomach seems to still be tolerating it well. I have always only had one cup in the morning and not been a huge coffee addict but do enjoy the taste and drink.
I am trialing introducing some dairy into my diet. First up was some cottage cheese. I grew up eating cottage cheese and recently got a craving for some. I found these individual cups at Costco so I picked up a case to try.
I had one for lunch with a diced apple and it was really good.
Along with a mug of bone broth and some left over veggie soup in the fridge that needed to be used up.
I snacked on some chips and this bean dip that I picked up to try. It was on a super sale at Whole Foods and was only $2. While I don’t follow the Engine diet the dip is quite good
Dinner was coho salmon that I spread with some dijon mustard and baked. I cooked a sweet potato and then added some bbq sauce. I also had a kale salad on the side and some cherry tomatoes.
After dinner I relaxed on the couch and watched the latest episode of Top Chef. I had a few slices of chocolate pumpkin bread and some almond milk.
