Hi Friends, happy WIAW! The deep freeze that we have been in finally seems to be lifting this week. Instead of -10 degree temps it is odd how temps in the mid 20s feels so much warmer. The long range forecast looks good and I hope that I can avoid any big storms in the coming weeks with my travel.
I picked up this coconut and almond milk to mix to my morning coffee. It is really good and has a mild coconut flavor that is not overpowering. Two thumbs up!
Still enjoying a break from oatmeal. I found myself wanting a break from it. Pancakes are my new craving lately
Lunch was mustard and red pepper hummus on crackers. I also had an apple which I reluctantly bought at Costco….I wanted gala’s and these were the only ones. Seriously Disney apple marketing?!? I had some bone broth and granola bar after as well.
I spent the afternoon at home and prepped lunches for the week and made some pumpkin bread. For diner I took a thawed piece of Sizzlefish salmon and topped it with some grainy mustard. It was a North Carolina meal!
I baked the salmon and it turned out great. I divided it and stuffed it in some taco shells and topped with guacamole. Had some carrots and kale salad on the side. It was a really good dinner that came together fast.
After dinner I had some frozen strawberries and blueberries with some warm almond milk while browsing Pinterest. I have some lentils I want to use up before moving and was looking for insirpiration and cooking ideas.
