Happy New Year! I hope you all had a wonderful holiday weekend with friends and family. I was in Minneapolis and Christmas Day I spent in the couch and under my blanket as it was a chilly -23 here. I wished I was at home with family but unfortunately my work schedule and flights didn’t allow for it. This was my fifth Christmas away I am hoping it works next year to get together. Great to keep in touch with friends and family though now by FaceTime and texting versus years past without the availability of technology.
This week for WIAW I thought I’d share my Christmas Day meals.
On Saturday I was at Costco and saw they had bags of this pancake mix. Steph has been posting about it and I thought I’d give it a whirl.
I whipped up a batch along with some eggs, apple, and yogurt. I added maple syrup of course and thought they were quite good. So quick and easy to just add the water and not have to add eggs and extras.
For lunch I had some bone broth in my Hyrdo Flask which I love by the way. It keeps things hot or cold so well. I picked up a holiday flavor kombucha. I hadn’t tried their product before. It didn’t win me over but was ok. Not sure I will buy it again. perhaps there is a different flavor I need to try.
I spent the afternoon watching Netflix shows and browsing Etsy. I am looking at buying some stickers for 2018 for my journal and planner. I treated myself to an Erin Condren planner for 2018 and am excited to start using it.
For dinner I cooked some ground beef and made a veggie and pasta bake. I saw frozen bags of multi colored organic cauliflower at Costco. I added some frozen spinach, peppers, onions, and cauliflower all together with spices (TJ 21 salute, pepper, and some crushed peppers). I mixed in some pasta and diced tomato and a bit of sauce in the fridge. I added nutritional yeast, covered it, and baked it at 375. It was hot and tasted quite good. I added more nutritional yeast after it came out of the oven. I had a kale salad along side and snacked on cherry tomatoes while it baked. I’ve been buying the 2lb containers at Costco and snacking away on them as I make dinner.
After dinner I reheated some apple crisp I made earlier in the day. I added in some frozen raspberries and blueberries and topped it with some vanilla yogurt. I also thawed a piece of pumpkin bread from the freezer and some vegan egg nog.
