Thanks for stopping by for another weekly WIAW linkup friends! Hope you all had a nice weekend. I had a low key weekend and aside from running errands and I didn’t do much exciting. I tried a couple new recipes and actually baked a few things which I haven’t done in forever.
I am still having open face egg toast for breakfast. I had thought of looking for some precooked bacon to try but couldn’t find anything that seemed good at the store. I settled for a couple of slices of turkey instead. I added some extra egg white to one of the cups. The TJ everything bagel seasoning is actually grown on my and I find I like it by adding it to the uncooked eggs and the flavor gets distributed throughout the egg.
I am also having an apple, yogurt, and some muesli along with this new to me coffee. I heated it up and added in some vanilla almond milk and Vital Proteins collagen and it was quite good. I had planned on brewing some cold brew last weekend but couldn’t find a container to store it in. I am hoping to find a jar/bottle this weekend that will work for it. Any suggestions if you store coffee in the fridge?
This is a recycled photo of lunch but I came home hungry after doing some shopping and was cold and hungry. Soup at lunch on my days off is my new thing. So warm and tasty. I also got a shipment of some grainy mustard from Asheville NC so I spread it heavily on the crackers. Yum!
I spent the afternoon baking. I made a version of an apple crisp with a gluten free topping that I found on Pinterest recipes. I used arrowroot powder on the apples and it really worked to thicken the sauce. I used maple syrup on the topping and it made it a bit wetter then a sand like texture. I totally forgot about the brown sugar I had in the cupboard.
After that cooked I made a loaf of Lindsay’s Pumpkin Oatmeal bread that she featured on the blog last week. I would recommended making this as it was really easy and smells amazing. Next time I think I will add some chocolate chips.
Dinner was a fillet of salmon which I mixed with the remainder of some tomato sauce I had in the fridge. I topped it on some Banza chickpea pasta and a bunch of nutritional yeast. I had a kale salad along side and snacked on a ton of juicy cherry tomatoes while the salmon was cooking.
After dinner I finally tried the baked items. Warmed up the crisp in the microwave and topped it with vanilla ice cream
Slice of the bread with some Earth Balance vegan spread which I ate while catching up on the first episode of the latest season of Top Chef. They are in Denver this year and I really like the show. Watch it every year.
That’s it for this week. Hope you all are having a good week and managing to avoid the Christmas craziness at the stores. No immediate plans for me this weekend. Mulling over a few weekend getaways but haven’t made any plans yet.
