Hi Friends! Time for the weekly WIAW fun. Hope you all had a nice holiday weekend and were able to relax and enjoy some good food. I had a good weekend and finally picked up my new car. Still have some details to work out with the electronic system but overall it is a definite improvement in comfort from my previous car. On Sunday I stopped by Mall of America to head to the Apple store first thing in the morning. I’ve been missing friends and family back in Canada lately so I stopped by a Canadian chain Tim Hortons for a tea while I was at the mall. Before you ask, yes the irony of a Canadian staple in the ‘Mall of America’ was not lost on me 🙂
Breakfast before heading out was eggs mixed with TJ Everything seasoning. I finally remembered to grab a jar the other day to try. I tried one day adding it after cooking but found it didn’t adhere very well. This time I mixed it in prior to cooking. I’m kinda on the fence about it. Not a totally loving it but not hating it either. I should try it in other things perhaps. Have you tried it?
I stopped at Costco and since it was a big weekend for the bank account I snatched a box of pumpkin for this steal of a deal.
Lunch was a vegetable barley soup that was on sale at Costco. I tried it for the first time and was impressed. Really flavorful and the seasoning was pleasant. Perfect for a cool day.
Dinner was a new recipe. I tried the Minimalist Baker’s tofu lasagna from her cookbook. I made a few swaps and added some spinach to the tofu mixture. I also made it ‘single serving’ by just layering and cooking 3 noodles in the dish. I topped it with nutritional yeast on top. I realized after that I forgot to add pepper to it but other wise it was really tasty. I have more of these brown rice gluten free noodles and will definitely be trying it again.
Dessert was some frozen tropical I had in the freezer with a glass of almond nog mixed with almond milk and some vanilla ice cream. I picked up a bag of pears at Costco which were fabulous but only ripened half the bag. I realized I had forgotten to take more out to ripen so swapped out this instead of the pear.
Hope you all are having a great week. Did you do any shopping on Black Friday or Cyber Monday? I make a few purchases online but just of things I needed anyways.
