Good morning friends! Hello from Minneapolis 🙂 I’m joining up for the weekly WIAW from my new home in the Twin Cities. I made the long 13.5hr drive last Thursday from Pittsburgh here and spent the weekend moving into my new apartment and starting to unpack and settle in. I started my new job right away on Monday so I am hoping to take a breath and relax a bit this weekend. I have already ordered some warm jackets and clothes and haven’t been too cold yet 🙂
Aside from ordering clothes and essentials my small 3qt Instant Pot arrived and was waiting for me. I had it sitting in my Amazon cart and finally joined the club when they went on sale for $52. I always have things I’m watching in the cart and it is interesting how the price will fluctuate. I’m planning on trying out rice tonight with it.
While I was unpacking and moving I took advantage of some quick things I had in the cupboard. One of which was this sample I got from Expo East. It was really good and I could easily see myself picking these up again if I was on the move or needing a quick go to.
I also made a mug of peppermint and vanilla coffee with mixing these two for a warm morning drink.
Lunch was a quick turkey sandwich which I totally forgot to take a photo of. I then came home and snacked on hummus and crackers while making dinner. I found these Simple Mills crackers in a big box at Costco and this local beet humus that is A+
Dinner was ground bison, and chickpea pasta I was trying out for the first time. It was really good. I think I cooked it slightly underdone but it was still really good. It was another sample from Expo East I had on hand. I also threw together a quick salad on the side.
I found Califa Farms Almond Nog and have been having a glass of it each night. It seriously tastes like the real deal and I totally suggest checking it out. I’ve been pairing it with some berries and a crispy treat chocolate bar. I forgot to take a photo but will get it next time 🙂
That’s it for this week as I’m off to prep for tomorrow and head to bed. Still trying to catch up on my to-do list. I’m hoping to possibly sign a deal on a new car this weekend so have some research and details to look at for that.
Do you have an Instant Pot?
Any recipes I need to try?
Have a great week!
