Good Morning Friends! Hope you all had a nice weekend and enjoyed the extra hour of sleep. I am going up for the WIAW fun this week for a quick visit. I am moving tomorrow and working today so it has been a crazy few days around here. I flew to Minneapolis last week for the day to accomplish some work tasks prior to starting. It was a quick trip but good to see the city for a few hours. I even fit in a hair appointment. I needed a cut and made an appointment at a salon there. I couldn’t really find a place here in Pittsburgh that I was happy with. I was thrilled with the cut and color that I had done there and will definitely be back to see her. (Photo taken in the airport Starbucks line at 8pm after being up since 4am. Pardon my tired look!)
Since I am have a ton to still wrap up I am going to have an abbreviated post this week.
This breakfast has been my day off go to breakfast. I have been microwaving 1 egg and 1 white for 2 min and topping it on each slice of bread. I am also totally loving the Califa Farms Pumpkin latte that I mix with unsweetened vanilla almond.
Mid morning snack after quickly loading the car before the rain started. The bottom of the pretzel bag with some nuts and raisins after packing baggies for the trip. Lunch was a quick break between packing and cleaning. Turkey with mustard and the last of hummus on crackers. I also savored my last bottle of Lenny’s Kombucha I had in the fridge.
Along with apple slices.
Dinner was a cupboard use up but quite good. I mashed a can of tuna with mustard and guac and added some cherry tomatoes. I broke up rice cakes and dipped them in it. I also had some baby carrots. Not the most gourmet meal but it worked.
Dessert (recycled photo) as my usual lately. I picked up another bag of these oatmeal chocolate chip bites to take with me.
