Good November morning friends. Hope you all had a safe and aren’t emerging from a post Halloween sugar high..hehe. I worked yesterday so aside from my festive Halloween scrub hats that was as festive as I got. I had a restful weekend. I did a lot of organizing and went through my belongings. This weekend I’ll be packing and cleaning and then officially hit the road next week after work. Tomorrow though I am actually flying to Minneapolis for the day. Apparently the state of Minnesota just implemented a new background clearance check and since it must be done in the state my company is sending me there to complete it. Strange to be there for the day and then the following week I’ll be there for good. Anyways I am joining up with Jenn and Laura for the WIAW fun once again.
Breakfast has been all about eggs. I mentioned trailing the introduction of eggs and so far it has gone really well. Today was the first day of actual eggs. I scrambled an egg and then microwaved it for 60 sec. I picked up some Udi cinnamon and raisin break to try from Whole Foods. I topped each slice with a bit of Earth Balance olive oil ‘butter’, slice of turkey, and an egg. It tasted so good and I was even happier that my stomach didn’t object. Yay for eggs! 🥚
I’ve been finding bananas to be misses lately as they are either not ripe or over ripe and spoil too quickly. I decided to switch back to apples and use them up instead. I chopped a gala up and added some yogurt on top
Since it was dark, cold, and rainy I wanted a hot beverage. I had been eyeing the pumpkin cold brew from Califa Farms since seeing it on Instagram recently. I haven’t had coffee in over a year and wanted to ease back into for my body. I picked a bottle up. I had 1/2 cup of the pumpkin brew (which is great and not too sweet or overpowering of pumpkin), 1/2 cup unsweetened vanilla almond milk, and 1/4 cup of water. I heated it all up and sipped away.
Lunch although tasted good was a hodge lodge use up. I ran out of the beet kraut and instead topped the rice cakes with extra avocado hummus. I also had a big mug of bone broth as I need to use it up.
For dinner I used up a freezer meal I had on hand. I picked these up for my long work days as a go to quick option but decided to cook one tonight. I found this Good Grains package at Costco. It had chicken, quinoa, and veggies. I added some black beans that were in the fridge and the scoop of guac. I had some carrots, tomatoes, and a kale salad on the side.
Dessert was a repeat of last week. I’m still digging the frozen pineapple and these heavenly hunk bars. I have like 5 left so need to savor the remaining ones!
That’s it for this week. Hope you all are having a great week. Hope you are having some great fall cold weather meals. Some friends said they made stew on the weekend and had me craving that. I think a hearty soup/stew needs to happen as soon as I move and get settled in.
