Happy WIAW! Is it just me or is October flying by? Seems that a lot of regions are having super warm temperatures. On Friday it was a warm 80F and lovely. Hoping the above normal fall weather stays and I can have a snow free drive go Minnesota in 3 weeks. I had a long day on Thursday traveling to Nashville for the day. Each time I am back I am reminded what a neat city it is and definitely one of my favorite places I have been fortunate enough to live in. I spent the weekend organizing logistics for the move and starting to figure out what I need to pack vs donate. I have some clothes to get rid of but have been disappointed with the ridiculously low payment that Thredup gives for the clothes. Other cities I have lived in have charity drop off bins but I haven’t seen them here. I need to search and figure out some local options. If you know of any great charities in the Pittsburgh area let me know.
Breakfast with a pumpkin flare. I stopped at TJ to grab a few things and picked up a jar of pumpkin spice. I added a bit of it with cinnamon to my oatmeal.
Lunch was an on the go meal. I was out running errands and had got delayed with more phone calls and emails about the move. I quickly ate a Go Macro peanut butter bar, banana, and some rice cakes while dealing with the emails and calls. I headed back out to run some more errands. Pittsburgh is a nice city but the road design is awful with tons of unnecessary congestion at tunnels. I snacked on a pouch of these while sitting in traffic
Dinner was this salad with Tessemae honey poppyseed dressing and some sun dried tomatoes. There was no kale at Costco this week so I picked up a bag of a kale, spinach, and red chard mixture instead to try.
Salmon with rice and beans for dinner. Trying to use up my freezer stock of salmon before moving. Thought about picking up some chicken but needed to use up my stock. I tried a new salsa from Costco that is quite chunky and fresh tasting. It isn’t overly hot and is definitely more on the mild side.
I had heard about these treats from E&C on the internet as a Costco find. Ironically they are made in Minneapolis. I had looked at Costco and didn’t see them. I stumbled upon them on Friday when I was there and picked up a bag. They are gluten and dairy free and are so good. The size is decent about 2 inches x 2 inches. They have been my evening snack lately. Two thumbs up and highly recommend.
My evening snack was a cold glass of vanilla almond milk, a rice crispy bar, and one of these cookies. I also snacked on a bowl of a frozen berry blend I had picked up from Costco.
Thanks for stopping by for the weekly chat. Hope you have a great week with delicious food!
