Hi friends, happy WIAW! Hope you had a good weekend. I had a low key few days after a busier then usual week. I needed a few days to recharge as I am working this weekend and then am flying to Nashville for the day tomorrow for an appointment. I heard about this candle company in Virginia called Sydney Hale which gives back to animal shelters and seems to have a great story. I found this coconut milk one at a local store here and it smells amazing. I’ve been burning it a ton and spending time in the evening listening to a podcast and writing this post.
I don’t think I’ve mentioned this new find but I am totally into this cashew butter. I discovered it from May over at Nutrition Happens on her Instagram page. She was raving about it and I picked up a jar to try. I have been using it in place of PB on sandwiches for work days. I’ve also been having a spoonful every morning. I’m not a fan of nut butters in the oatmeal but will dip the spoon and have it on the side.
I’ve also been digging these new snacks from Kind. Target has them on sale and I’ve tried all three varieties but this strawberry one is the best. They are a great quick mess free snack. I take them to work every day.
Lunch was the usual turkey, kraut, crackers. I am trying to savor the local items I’ve enjoyed like this Cleveland beet kraut before moving.
Dinner I had a craving for steamed veggies and have been fulfilling it lately. I steam frozen veggies and top it with an odd combo of a bit of Tessemae honey mustard. Tonight I added a bit of ketchup as my mustard bottle only had a bit left. Odd combo but was surprisingly good.
I cooked a salmon fillet and rice but ended up over cooking the rice a bit. I subbed some black beans that I had in the cupboard instead and topped it with salsa and a scoop of guac.
Dessert was frozen berries and some vanilla almond yogurt. I also found Califa Farms unsweetened vanilla almond milk in stock and bought a ton of bottles. I’ve been having a cold glass every night.
