Good morning friends and happy WIAW. Summer weather seemed to dramatically disappear here this weekend. When I woke up on Sunday it was 44F outside and a freezing 66F inside my apartment. Had to immediately turn the heat on…brrrr. Welcome to October I suppose. I spent the weekend around home. I had physiotherapy for my foot on Friday and it could definitely feel the effects of it over the weekend. Gave me time to finish a few books and do some research on my next job. As I mentioned I only have 5 more weeks here in Pittsburgh. I officially lined up my next contract and the location is…Minneapolis, Minnesota. It is a great work opportunity but I’d be lying if I didn’t say I’m not completely thrilled with the reality of the cold and snow winter ahead. Interestingly though is I have since learned that the Super Bowl is in Minneapolis this Feb and it will be the second city that I will be living in during the Super Bowl. I was living in Phoenix when the game was there. I’ve driven through southern Minnesota and part of Wisconsin as a child during a summer vacation but have never been to the Twin Cities before.
Now onto the reason you are here…the WIAW fun…
Continuing to use up random collagen in the cupboard. I ordered a small container that should last me till I move. Added it, flax, and a huge scoop of cinnamon to my oatmeal. I am also still having the unsweetened Kite Hill plain yogurt. Honestly when I tried it initially I wasn’t totally won over but it has now grown on me and I like it. Definitely needs to be with some fruit and since it is a little runny I usually serve it and then toss the bowl in the freezer to get a slight chill and firmness while I cook the oatmeal.
I was doing some research on Minneapolis and wanted something warm to sip. It wasn’t feeling like tea so heated up a mug of bone broth. Nuts and pretzels to munch on as a mess free computer snack
I tried out this kale pesto hummus from Hope Foods this week. Whole Foods had the Hope brand on sale for $2.50 and I picked this up to try for the first time. It is definitely strong with herbs and while not bad it isn’t a fav and I probably wouldn’t buy again. So far the spicy avocado has been my favorite that I’ve tried. I added it to my lunch for the turkey crackers. I also added some of the beet kraut.
Gala apples are the only variety that I buy. They are my fav and I like how they aren’t mushy like Macintosh’s can be. Came to the conclusion that I think I’m not a fan of the ginger flavor of kombucha. Drank it anyways and was ok.
Dinner was a rice bowl with ground bison, salsa, and guac. I’ve been buying the mini guac cups from Costco. Keeps great and avoids the spoiling that I’ve had with the larger containers sometimes. Also had a kale salad and some steamed broccoli.
After dinner I had a bowl of frozen berries with some vanilla almond yogurt and a Made Good crispy rice bar. I felt like a little chocolate and had a Chloe’s chocolate banana fruit bar as well.
