Good morning friends. I hope you all had a nice weekend and were safe from the hurricanes. I have several friends in Florida and it was a tense weekend and I thought about them often. Hoping that any of you’re friends and family were safe from the destructive storm. Thanks for stopping by for the WIAW linkup this week.
I cooked up some pancakes again from Simple Mills but they turned out thin and mushy. I can’t seem to figure out what the cooking trick is to them. People seem to rave about them but I feel like I am missing a step. I threw them out and instead heated some oatmeal with Califa Farms almond milk. I had planned to top the pancakes with a super ripe banana I had sliced up. I tossed the slices in a bowl and topped it with Kite Hill yogurt. I stocked up at Whole Foods with a ton since it was on sale for a great price.
I had a call with the nurse practitioner I am working with about my bone and hormone issues soon after. She has been helping a lot and I’m so glad to hopefully be on the road to fixing the bone and digestive issues I have.
I was immediately out the door soon after the call to get to my physiotherapy session for my foot. I’m starting to trial walking without the boot. After a bit of a setback it seems to be better now. It is an adjustment to walk without it after being in it for so long. The PT happens to be 1/2 block from Costco so I swung in there for some groceries before heading home.
I got home and was starving. I heated up some bone broth and sipped on it. I ate these nuts and raisins along with a banana muffin while I topped some rice cakes with avocado, mustard, and turkey.
I also had a bottle of Lenny Boy kombucha and one of these bag of bites.
Afternoon snack was purple Jackson chips. These seem to be hit and miss as to what stores carry this variety. I found them in Cleveland a few weeks ago and picked up a bag. Excuse the old photo and the 2 year old expiry date!
I prepped my salad for dinner to let it marinade and set in the fridge. I added in some mushroom slices to trial.
I had a craving for carrot and raisin salad the other day and realized I hadn’t made it in ages. I shredded up a couple of carrots and added a spoonful of plain almond yogurt, sprinkle of cinnamon (I’m all about the cinnamon right now), and some raisins. Let it sit in the fridge and chill a bit. It hit the spot.
I cooked a fillet of coho salmon and added some rice. I was uninspired as to what to add to it so I ended up adding some BBQ sauce, guac, and couple spoonfuls of salsa.
After dinner I heated a cinnamon dusted apple in the microwave and topped it with some Nada Moo Vanilla ice cream that was on sale at Whole Foods
I am off to Baltimore tomorrow for Expo East. I am excited to attend again this year and meet up with a few friends in the area. If you will be there let me know so we can meet and say hi! Hope you all have a great rest of the week and weekend 🙂
