Good Morning Friends. Thanks to Laura for hosting WIAW again even though she is recovering from ACL surgery…Get well soon Laura! I had a busy week and work last week and then a busy few days. I flew up to Toronto on Thursday to take care of some documents and needed renewing. I had a few hours before my afternoon flight home and took the train in from the airport to downtown. Toronto is a cool city if you ever get the chance to visit.
On Friday I was up early again and threw together a quick breakfast of oatmeal with vanilla yogurt. I’ve only found this vanilla yogurt in the small containers and it is amazing. It tastes so natural and not the fake vanilla flavor that some yogurts can have
I headed out and made a short drive over to Cleveland. First stop was at Earth Fare. I was thrilled that they had Lenny Boy kombucha in stock and coincidently on sale…I made sure to stock up 🙂 I’ve been in withdrawal since no one sells it in Pennsylvania
I even made it over to Megan’s stomping grounds and checkout out one of her favs. It was a quaint little bakery with amazing looking bread and sweets. I eagerly picked up a couple of the vegan cookies they had. I will definitely be back on my next time in the city.
After running a few more errands and navigating through the city I headed back home. I had hoped to be home around lunch but after some heavier traffic and some missed exits I ended up getting in quite a bit later. I was absolutely starving. I had forgotten my toothbrush so snacking or stopping for lunch wasn’t an option due to the Invisalign. I was regretting not having a back up in the car. Once I was home I immediately took out the cookies and tired them. The chocolate chip was good but the trail mix one was amazing. I was regretting only buying one! I will definitely have to return soon for more.
After eating half of each I headed back out to Costco for a forgotten item that was on sale till Saturday. As soon as I got there it started to downpour. I ended up making a quick walking trip to get the items and checkout without my boot. I got home right before dinner and after warming up and drying off I relaxed for a few minutes before tackling dinner.

I cooked a piece of coho salmon that I had defrosted all day in the fridge. I added it to rice that I cooked and then topped it with sirracha and nutritional yeast. Chilled diced beets with some honey mustard on the side with some baby carrots.
After dinner I had a cold kombucha and the rest of the trail mix cookie. Delicious!
