Happy WIAW Friends! I am actually off work today and am hoping to make progress on lining up my next job contract. Fingers crossed for today! I’ve been nursing a sore IT band and quad and got a massage on the weekend which helped but thinking I need to book another and see if I can get more relief.
I mentioned I was testing going gluten free with the nutritionalist I’m working with. After seeing no changes to my stomach I’ve been reintroducing the few wheat foods I’ve been enjoying. Sunday morning I whipped up a stack of pancakes
Sadly after a few days of eating eggs I started to react to them so have had to eliminate them again 🙁
I stopped by Trader Joe’s before my massage and picked up a few things including some pitas. As soon as I got home I make some lunch with some remaining turkey. One half is actually a smoked turkey and the other is roasted. Delicious and totally hit the craving I was having. Also sipped on bone broth and a komucha afterwards. I was running out to another appointment and forgot to take a photo..ooops!It started absolutely pouring rain when I was out and my afternoon of errands ended up taking a lot longer than I had anticipated. When I got home I cut up a pepper and snacked on it along with a beer I picked up in Asheville. Not sure what happened with the photos being darker.
Also snacked on rice chips while dinner cooked. These are so good. They were on sale last week and I grabbed a few bags to stock up.
Dinner was rice in the small rice cooker. So easy and hassle free to cook a single serving in. Best $16 I’ve spent and no baby sitting a pot on the stove.
Halibut fillet baked in the oven which I flaked and mixed with the rice and some nutritional yeast.
Also had a salad that I which I grew together. I am always having salad in a big bowl. I find it so much easier and less mess. I watched the latest episode of American Crime. I tend to just pepper the fish and bake in the oven. I need to get a bit more creative though I think but the easy peasy method is hard to break 🙂
After dinner I had some thawed strawberries and a fig bar. I also snacked on some red vines while I browsed pinterest for bob type hairstyles to show my hairdresser at an upcoming appointment.
