Good morning! Hope you are had a nice holiday weekend. Hopefully you got your taxes done…I filed mine on the weekend. I’m not a last minute person just was low on the priority list and kept having other things come up. Aside from taxes I had a low key weekend and enjoyed some warm weather we were having in Nashville. My back was achey so I decided to take it easy and spend time with a heating pad on it. I’m starting to figure out and look at options for my next contract as my time in Nashville will come to an end next month. Decisions, decisions!
Back to oatmeal with collagen and ground flax, hemp, and chia seeds for breakfast. Still trialling going gluten free to see if it is a trigger for my stomach. No changes noted so far. I topped it with maple syrup for some sweetness.
The dietitian I’m working with is having me introduce eggs. I’ve been have a spoonful or two and increasing slowly. I whipped the egg and microwaved it for 45 sec. Had a bit of ketchup on my two spoonfuls today. No side effects yet but going slowly. I found some new to me gluten free tortillas at Whole Foods. I like the taste so far compared to the first variety I got. Avocado and smoked turkey with some gluten free pretzels and bone broth. Hope the bone broth will help my back and joints.
I was out grocery shopping in the afternoon and spotted Spindrift at Costco. I’ve seen people mention it and while I used to drink LaCroix I stopped after finding some flavors just weren’t tasting good. A friendly lady in Costco said she really liked it and how fresh tasting it was. I decided to pick up a case and give it a try it for $13. I chilled a can of the Raspberry Lime in the freezer when I got home. It is really good. Tastes like real fruit. I’ve tried the lemon one so far as well and can it see it being my cool drink this summer.
I snacked on these chips while drinking the raspberry and lime. I tried them last year at Expo East and have never seen them in stores until I was in Asheville. I picked up a bag and have been snacking on them since
I picked up these beets in Asheville as well and had a few while dinner was cooking. They tasted fresh and good but while there was a mild flavor of onion it wasn’t overpowering.
I’ve been having salads with spinach and tomato with dinner.
I baked a fillet of salmon for dinner and some rice. I got busy on a FaceTime call with a friend and totally forgot to take a photo…oops!
I caught up on my DVR queue after dinner. I snacked on partially thawed strawberries which I am still loving. I thought about blending them in the Vitamix for a sorbet but got lazy. I also tried some gluten free cookies I picked up. I’ve tried the gluten free fig bars and while they are ok I wasn’t thrilled with the taste. I saw some different ones at Sprouts and picked them up. I got Simple Mills chocolate ones and the chocolate chip ones from Home Free. The Simple Mills are about the size of a 50 cent coin and while good weren’t overly crunchy. I put the tray in the freezer and they definitely taste better frozen and slightly thawed. The Home Free ones however are fantastic! They are about the size of a nickel – quarter and you would never know that they are free of most of the allergens. The Home Free ones would fake out anyone I’m sure compared to the traditional ones 🙂
That’s it for this week. No big plans for the weekend but may check out a home and living show that is happening around Nashville this weekend.
